Gluten Free Bread

Rice Bread
for bread machine
1 cup water
1/3 cup milk (sometimes I use almond milk)
2 eggs   (can use 3 tsp egg replacer mixed with 4 TB water)
1 tsp apple cider vinegar
4 TB oil
2 TB sugar
1 tsp salt
1 1/2 cup white rice flour
2/3 cup brown rice flour
1 1/2 tsp xanthan gum (you can also use guar gum instead)
2 tsp quick rise yeast
Mix the wet ingredients.  In a separate bowl, mix the dry ingredients.  Then combine them before putting in the bread machine pan.   Bake on Gluten Free cycle.

Almost Vegan Black Bean Burger Patties

Black Bean Burger/Patties
I say "almost vegan" because I used one egg instead of Ener-G-egg replacer

Mix in food processor:
1 cup cooked black beans
1 carrot
1/2 onion
3 potatoes
Then mix in:
1 cup corn
1 t hot sauce
1 beaten egg or egg replacer
Heat and spray a nonstick pan.  Fry on one side for six minutes and on the other for 4 minutes.

So far, I have just eaten these with homemade picante sauce.   I am going to put two in a bun (they are small) for my sandwich to take to church on Sunday.

Chili for a Chilly Day

Well, it's a chilly day for Texas anyway.  


I adapted this from a recipe for Venison Chili using hamburger instead.






Saute:
1 or 2 lbs of beef
1 chopped onion
2 cloves garlic


Mix in a bowl:
1 t salt
1/2 t pepper
1 t sage
1 t cumin
2 T chili powder



Add this mixture and the following to the cooked meat:
1 quart of tomato juice
2 cans of kidney beans.



Simmer for one hour or so.


My husband likes it, even with the beans.

Nine Ingredients for Salad


The more colors in the vegetables you eat, the more diverse the nutrients you are ingesting. Good for you!

I have this list on my refrigerator which reminds me to get as many vegetables into our salads as possible. I check the list constantly while making our salads. My house is loaded with finicky eaters, so everyone gets one custom made.

I used a Rollabind hole puncher and discs so I can move the recipes around or add to them.
