Gluten Free Bread

Rice Bread
for bread machine
1 cup water
1/3 cup milk (sometimes I use almond milk)
2 eggs   (can use 3 tsp egg replacer mixed with 4 TB water)
1 tsp apple cider vinegar
4 TB oil
2 TB sugar
1 tsp salt
1 1/2 cup white rice flour
2/3 cup brown rice flour
1 1/2 tsp xanthan gum (you can also use guar gum instead)
2 tsp quick rise yeast
Mix the wet ingredients.  In a separate bowl, mix the dry ingredients.  Then combine them before putting in the bread machine pan.   Bake on Gluten Free cycle.

  1. This bread looks wonderful. I am amazed you did not use any starches other than the rices. I thought you had to use pure starches like potato, corn, tapioca or arrowroot. I will try this very soon. I have mail ordered some brown rice flour and am awaiting my order.
